Shanna's  “King Ranch Halibut”
This is one of John's favorites, Shanna will serve herself up one helping and John will eat the rest.  John recommends a double batch if you have company, especially if it is him.
A little background is in order.  King Ranch is one of the largest and oldest ranches in the world.  Shanna took this Rotel recipe and substituted Halibut for Chicken and what do you know?  It was DELICIOUS!!!!  Most cowboys there probably wouldn't know what a Halibut is.  

Ingredients

1/4 cup margarine
1 medium green bell pepper, chopped
1 medium onion, chopped
2 can (10-3/4 oz) condensed cream of mushroom soup
1 can (10 oz) Ro*Tel Extra Hot Diced Tomatoes and Green Chilies
1 lb cubed cooked halibut
12 flour tortillas, torn into bite-sized pieces
2 cups (8 oz) shredded cheddar cheese
 

Directions
Preheat oven to 325F. 

In a large pot of salted boiling water add Halibut chunks, cook until flaky throughout.  This will take LESS than 3 minutes.  Drain  in collander and run cold water over fish to stop cooking.  DO NOT over cook the fish.  Flake the chunks out.

In a large saucepan, in hot margarine, cook pepper and onion until tender, about 5 minutes. Add soups, Ro*Tel and halibut, stirring until well blended. Spray Pam cooking spray in a 13x9x2-inch baking pan, alternately layer tortillas, soup mixture and cheese repeating for three layers. Bake 40 minutes or until hot and bubbling.

Makes 8 Servings.
